Appearance
Deep red with purple hues
Bouquet
Complex red and dark berry aromas with underlying earth and forest floor characters
Palate
Medium bodied with intense berry and spice flavours. The palate is textured with length and balance.
Winemaking
Once the selected vineyard parcels are at optimal physiological ripeness they are hand harvested and brought to the winery for immediate de-stemming. Once in the winery, several winemaking techniques are used to increase complexity in the final wine. These include a cold maceration prior to ferment, the use of whole berries and a small amount of whole bunches in the ferment.
Warm fermentations (28'C to 32'C) are also adopted to increase complexity. Minimal handling is used to preserve fruit flavour.

Alc/Vol : 13.0 % pH : 3.65 TA : 5.8 g/L
Cellaring
Excellent current drinking and will age well over 3 to 5 years in a good cellar.
Suggested Cuisine
A good partner to lamb or try with tuna or salmon steaks.
