G R A P E

This white variety is the foundation for some of the most aromatic and popular white wines in the world. Typical fl avours displayed by these wines includes asparagus, capsicum, grapefruit and passionfruit. Sauvignon Blanc grape bunches are round and compact with small green/yellow berries

V I N E Y A R D

Sauvignon Blanc was sourced from mature vineyards in the King Valley, Strathbogie Ranges, Alpine Valley and Yarra Valley. Regular sampling and close monitoring of fl avour development in the individual vineyards of these cool regions provided an excellent spectrum of classic Sauvignon Blanc fl avours.

V I N T A G E

Due to ongoing drought, late spring frosts and hot prolonged summer/autumn temperatures, 2007 was a year that saw considerably lower crops that ripened almost four weeks ahead of time. However, the lower crop levels facilitated even ripening, providing fruit of intense fl avour.

T E C H N I Q U E

The approach to this wine is all about protection. Gentle pressing to avoid any bitterness from the skins and minimal exposure to oxygen through the whole process ensures the retention of delicate fruit aromas and  fl avours. Fermentation: Temperature controlled (10-14 degrees) in Stainless steel with selected yeast strains.

W I N E

Colour: pale straw with fl ecks of green. Aroma: intense tropical fruit with slight hints of spearmint. Palate: lively citrus with passionfruit and mango undertones. A refreshing and lingering  finish.

F O O D M A T C H

Goats cheese tart, spicy salt and pepper squid with a mango, tomato and mint salsa.
