Starvedog Cabernet Merlot

Our wines are made with fruit purity and elegance foremost in mind. Each vintage we strive to produce intensely flavoured and finely structured wines, wines that profile the best of the Adelaide Hills cool climate, great aspects and free draining soils. Vintage A cool moist spring led to good early spring growth and flowering conditions. A long ripening period resulted in rich, flavoursome wine from the 2006 vintage.

Tasting Notes

The colour is deep red with a magenta rim. Intensely aromatic, cool climate Cabernet fills the glass with blackberries, cedar and tobacco leaf. Savoury notes of clove and spice sit in the background, evidence to the use of the highest quality French oak. The palate is sweet and textural; Merlot provides plumpness of fruit and Cabernet, structure and elegance resulting in the finest of tannins. Vibrant flavours of plums, dark cherries and tar mix with sweet vanillin notes and combine with a firm acid backbone and integrated tannin to create a wine of elegance and tremendous persistence.

Winemaker's Notes

The combination of a cool Mediterranean climate, great aspect and free draining soils produce wines of classic varietal definition. The vines are grown in various, predominantly gravely loams over clay, are 10-16 years of age and were machine and hand picked. Stringent selection of fruit in the vineyards and a combination of new and old world winemaking techniques ensures maximum fruit/vineyard expression. Each parcel of wine is maintained individually throughout maturation to maximise options in creating finished wines of definition and great personality.
